Zucchini, Lemon & Mint Pasta ~ Easy & Light Pasta Recipe

When I see an easy recipe, I jump at it and lose no time over making it. Therefore, when I saw this Zucchini, lemon & mint Pasta recipe on BBC GoodFood India's September Issue, I knew I had to try it. It has 3 basic ingredients and takes only 30 minutes to cook. I simply loved the lemony pasta which is also very light on the palate & tummy.

Ingredients & Recipe for this easy pasta is given below, please note the ingredients quantity serves 1 and I doubled that as I was making for two:
Rigatoni or Penne Pasta (75 g) - I used penne pasta
Olive Oil (1 tbsp)
Zucchini (3 small or 1 large sliced into diagonal shapes)
Garlic Clove (1 sliced)
Lemon (1/2 zested & juiced)
salt & pepper to season
mint (1/2 bunch chopped)
parmesan cheese (1tsp grated) - One can cheddar cheese also.

Boil the pasta till al dente, set aside. While draining the pasta, keep aside 2 tablespoons of pasta water.
Fry the zucchini slices till soft & golden brown. Throw in the garlic slices & fry for a minute more.
Tip in the pasta water, lemon zest & juice and pasta, stir everything together. Season with salt & pepper.
Plate it, then garnish with mint & grated parmesan cheese.

Enjoy this pasta at the end of a work day and you will feel refreshed at the end of the as it has both mint & lime. Or like me, have it on a lazy weekday off :)
