Serradurra (Sawdust Dessert) ~ Easy dessert from Goa

I am always on the look out for easy desserts - Easy to make but awesomely delicious in taste (and I do have got quite a few in my kitty). So, when I saw the 'Star Recipe' of the BBC GoodFood India Magazine's August Issue, I knew this was another 'easy recipe' which was going to be added to my list. 

Serradurra (Sawdust Dessert) requires only 3 ingredients and requires no baking; how easier it could get!! I made it this weekend and it turned out to be divinely decadent & delicious. Thumbs up to BBC GoodFood India people!! 

Serradurra , which means Sawdust in Portuguese, is made from condensed milk, fresh cream and good old Marie biscuits. This dessert features as part of the feature on Goan Christian Dishes on August Issue of GoodFood. I made slight tweaks in the recipe when I made it, mostly in the quantity of the Marie Biscuits & preparation to suit me. I share with you my version of the 'Serradura' here.

Ingredients:-
Condensed Milk - 300 gms
Fresh Cream - 600 gms Fresh Cream
Marie Biscuits - 200 gms

Preparation Method:-
  • Pour condensed milk in  a bowl and blend with hand mixer. 
  • Add fresh cream and beat well, so that both ingredients mix well. 
  • Crush Biscuits to form fine powder; I blitz them in Mixer.
  • In a bowl (or glass as I did) fill half quantity of powdered biscuits, sprinkle some water to make it settle.
  • Pour the mixture of condensed moil & fresh cream slowly.
  • Freeze the bowl (in the freezer compartment to make it more specific). Add the remaining powdered biscuits after half or 1 hour of freezing (this ensures that the powder on top does not mix into the liquid mixture). 
  • Freeze it overnight or at least for 8 hours. You can use cling film to cover it too( I did not bother).
  • Take it out 15 to 30 minutes before serving.
  • Dig in and enjoy the decadent delight!


The combination of the fine powdered biscuits & smooth, yet creamy mixture is so delicious as it hits the tongue. Try it and you will know what I am talking about.
