Nigella Lawson's Slow Roast Tomatoes, Goat's Cheese & Mint Salad ~ A Perfect Summer Salad

I Love salads!! They are both healthy and tasty, which is what I always try to achieve in all my meals. This summer I wanted to try out some new salads and going through the recipe Book Nigella Express (by Nigella Lawson), I came across what seemed to me an easy salad, with one of my most favorite ingredients - cherry tomatoes. The cherry tomatoes in this salad are slow roasted( and the result is called moonblush tomatoes by Nigella) and it has to be done a night before,  which is the only time taking part about this salad. The rest of the ingredients have just got to be thrown in together and voila, its ready. 

So presenting to you Slow roast Tomatoes, Goat's Cheese & Mint Salad from Nigella Express Recipe Book.


The Ingredients for the salad are:-
500g (about 24) on-the-vine cherry or other baby tomatoes
1 tsp table salt 
1/4 tsp sugar
12 tsp dried thyme
2 tbsp olive oil
200g rocket or spinach leaves
200g soft goat's cheese
1 tbsp lemon juice
2 tbsp extra virgin olive oil
2 tbsp fresh mint, chopped

The cherry tomatoes have to be slow roasted and the process has to be done, ideally a night/day before. Here's how:-
  1. Preheat oven to 220C. Cut tomatoes in half and sit them cut side up in an ovenproof dish.
  2. Sprinkle with salt, sugar, thyme and olive oil. Put them in the oven, and immediately turn it off.
  3. Leave the tomatoes in the oven overnight or for a day without opening the door.

Preparing the Salad:-
Now, to make the salad, arrange the leaves in a large dish or plate  and add dollops soft goat's cheese randomly over it. Add the slow roast tomatoes.
In the same dish the tomatoes have been cooking in, whisk together the lemon juice and olive oil and pour over the salad. Scatter with the chopped mint.

The vibrant colors of the salad are too tempting and the tangy taste of the goat's cheese & mint is just too good. I have made this salad many times in the last 2 months and everyone in my family love it (even the brother who has zilt faith on my cooking abilities)
